Best Detox Yet…

 

 

I mentioned in a previous post that I was doing a raw detox for two weeks. I love doing this every few months – it helps clean out my system and just makes me feel yummy all over. This time around was particularly great because I picked up a new “un”cookbook by Ani Phyo called “Ani’s Raw Food Kitchen”. There are a lot of great recipes in there from breakfast to dinner. I was particularly drawn to this one breakfast recipe call Save The Chicks Pate. The base is made from raw almonds and sunflower seeds. I’m not one to eat sweets for breakfast – I definitely prefer savory so this became a mainstay most mornings for me. I was totally able to make a large batch and have it for following mornings (especially for work since the only raw thing you can get around there is a fruit salad. One cannot live on fruit salad alone!).

 

Absolutely recommend getting this book if you’ve ever been interested in raw food cuisine. Plus the majority of her recipes don’t require a dehydrator – which I love. Even though I have one, I have this thing about waiting 12-24 hours for my food to be ready. When I’m hungry I want it now dammit! (I know ya’ll know what I’m talking about heh).

Mondo Bananas

 

 

Last night I was pacing back and forth in my apartment trying to keep myself occupied. I was so bored, I even cleaned! Realizing it was too early for me to start dinner, I decided that I need to bake something. Anything. Looking over what was on my counter and in my fridge, I decided on Banana Nut Bread. This was a recipe I veganized a looong time ago and it’s damn tasty! I always add extra bananas to it to really make the flavor kick.

 

Banana Nut Bread

1 cup sugar

1/3 cup Earth Balance

2 tbs ground flaxseed (mix with 6 tbs water then set aside to thicken)

1-2 mashed ripe bananas

1/3 cup water

1 2/3 cup flour

1 tsp baking soda

1/4 tsp baking powder

1/2 tsp salt

1/2 cup chopped nuts

 

Preheat oven to 350 degrees.

Grease bottom of loaf pan

 

Mix sugar and margarine together. Stir in flaxseed mixture until blended. Add bananas and water – beat for 30 seconds. Sitr in remaining ingredients except nuts just until moistened. Stir in nuts.

Bake for 50-60 minutes or until pick comes out clean.

From nowhere to back again…

It’s been a while, yes. I apologize. Seems things took longer than expected with recovery and figuring out what I can and cannot eat.

 

I’m just finishing up a 2 week raw detox that I do every 6 months or so. I felt it was really needed given my circumstances and it helped pave the way to a healthier me! :)

 

Next week I’m participating in Avon’s Walk for Breast Cancer and I’m super excited about it. I was able to raise $1885! October is Breast Cancer Awareness Month (though it should be every month). So ladies, be sure you get your exams!!!

 

October is also Vegan MOFO month. Look for posts about absolutely EVERYTHING having to do with food – be it the appliance I use to make vegan pesto or why I love almonds so much. :)
